Cerbaiona has renewed its cellars. It is now a wine atelier, It is now a wine atelier with advanced technology.

A radical renewal of the winery began in 2016, with the construction of a second subterranean area built by driving 1.5 kilometers of micropiles into the ground. Each phase of the production process has its own dedicated space, and the winery is designed as a wine atelier. For aging, a new barrel room was built with cross-vaulted ceilings—a kind of “basilica of wine”—marked with the seal of a sixteenth-century vincellaro.

The winery

An adjacent room, used for assemblage and bottling, houses non-vitrified concrete tanks. The underground vinification area is clad in cobalt-blue resin and was custom-designed in collaboration with the Venetian company Lasi to meet specific production requirements.

It is equipped with specially made steel vats and includes a laboratory overlooking the cellar. “Over the last few decades,” Fioretti explains, “vinification has benefited from technological advances that deliver results previously unimaginable. We have chosen to embrace these standards for Cerbaiona, as one would in an atelier”.
